If you’re looking for an easy homemade cake that’s incredibly soft, moist, and full of fresh apple flavor, this recipe is perfect. Made with just a few everyday ingredients, it’s light, fluffy, and delicious with a cup of coffee or tea. The tender apple pieces keep every bite moist, while a light dusting of powdered sugar gives it a beautiful finish.

Prep Time: 15 minutes
Cook Time: 40–45 minutes
Total Time: 1 hour
Servings: 8–10

Ingredients

  • 3 medium apples, peeled and diced
  • 3 large eggs
  • 1 cup (240 ml) milk
  • 1/2 cup (120 ml) vegetable oil or melted butter
  • 1 cup (200 g) granulated sugar
  • 2 teaspoons vanilla extract
  • 2½ cups (310 g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon (optional)
  • Powdered sugar, for dusting

Instructions

Step 1: Prepare the Apples

  • Peel, core, and dice the apples into small cubes.
  • If desired, toss them with the cinnamon for extra flavor.

Step 2: Make the Batter

  • Preheat the oven to 350°F (180°C).
  • Grease or line an 8×8-inch (20×20 cm) square baking pan.
  • In a large bowl, beat the eggs and sugar until light and fluffy.
  • Add the milk, oil, and vanilla extract, then mix well.

Step 3: Add the Dry Ingredients

  • In another bowl, combine the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until smooth.
  • Fold in the diced apples.

Step 4: Bake

  • Pour the batter into the prepared baking pan.
  • Smooth the top with a spatula.
  • Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.

Step 5: Finish

  • Let the cake cool in the pan for 10–15 minutes.
  • Remove and cool completely.
  • Dust generously with powdered sugar.
  • Slice into squares and serve.

Tips for the Best Apple Cake

  • Use sweet-tart apples like Honeycrisp, Gala, Fuji, or Granny Smith.
  • Don’t overmix the batter to keep the cake soft.
  • Add chopped walnuts or raisins for extra texture.
  • Sprinkle cinnamon sugar on top before baking for a caramelized crust.

Storage

  • Store covered at room temperature for up to 2 days.
  • Refrigerate for up to 5 days.
  • Freeze individual slices for up to 2 months.
